Rebrand QuickFIN/QuickFINDemo -> quickfin across package name, Expo app name/slug/scheme, iOS bundle identifier, permission strings, and docs. The Forgejo repo was also renamed to quickfin.

Note: gitignored ios/ and android/ native folders still carry the old name; they regenerate from app.json on the next expo prebuild --clean.
